Spin Class...

I was the only one in spin class today...I guess I got a free personal training session! Here is our spin room and all the paintings on the wall glow when we turn out the lights. ( That's so no one can see each other sweat as much as we do!) Of course I am a dork and like to have my bike at the head of the class! :)

Biggest Loser Finale Tonight!

It has been a great season with great contestants! I have been cheering on the sisters in purple the whole way and they both made it to the final three!!!!! Andrew is cooking me scallops tonight and I am making us side salads to go with! So excited!!!! And of course Jillians last show...sad to see her go! :( I will still watch because the contestants and their incredible work is what makes the show!

Child Abuse Prevention 5K Race

The race started a half hour late. Everyone was ready to go at 8:00 and they made a mistake and it started at 8:30...not a great starte for everyone who was all warmed up ready to go! The temperature that day was 92 and the humidity was ridiculous! The sargent of the military base mad the course and it was through the woods on a (what they called ) trail. There were tree branches sand, small holes/ditches to jump, and just craziness! Some was on a path but not much! I joints and muscles were a little ssore when I woke up but, it was not too bad until I started running in the heat! I did not beat my last race time but I was glad to finish and a pretty good time for what I had to tackle! :) So here is a little of the race day to share... Of Course I had to get a picture with my Lucky Charm!

Cheryl "Granny Grayson" came out to support me in the race. She was my paraprofessional while I worked with Elijah!

Tomorrow is the Race!

I did not have too many pictures on my teaching disc. I have all my other pictures of him, some really sweet ones, on my old computer that we still need to retrieve data from when it crashed!

This was him on field day with another classmate! Here we are on field day with our matching shorts. He thought we were so cool and everytime someone came over with a camera he would say,
"Take a picture of us. We are twins!"
Far from it but it was too cute!

I am going to try to run this one hard and strong for him! I am very sore when I woke up this morning and my joints and muscles are achy because of the high humidity we are having. I am going to hold my head high and strong just like he did each day he walked into my classroom, hiding that pain! Results and pictures to come soon!

New Watch Coming Tomorrow!!!!!

I ordered this new watch, Garmin Forerunner 450, I have been wanting for running and cycling. It has a GPS on it so you know how far you ran or rode and what pace you are going at. One of the fitness instructors and my friends husband has one and they work really well. Another thing it does is tells you how many calories you burned after any workout! Then I can upload any workout onto the computer to analyze and make goals for yourself. I am super excited and it is supposed to arrive tomorrow...I have been tracking it like a crazy person!

Can't believe I forgot to post this...

I hit 35 pound weight loss on Monday!!!!!!!!! :)

Doctor Visit Soon

I have a doctor appointment coming up on May 31 to see a new doctor to treat me for my Scleroderma. I have not seen a doctor for almost 4 years now. I have been doing pretty well and had a great pregnancy not being on any medications. I have been concerned with a couple minor problems and have been told by my family physician that I might feel good on the outside but, this disease needs to constantly be treated on the inside. I am really looking forward to seeing this doctor to start on some medication and physical therapy. Please say an extra prayer that this doctor is educated enough with Scleroderma to treat me properly. I have seen too many doctors in the past that "think" they treat Scleroderma and it has been a nightmare. I will keep everyone posted and thank you for your extra prayers!

Quick Lunch Idea

I forgot to take a picture of this but, it was so easy and very yummy. It is also good reheated.


Broccoli and Cheese Crustless Quiche
Serves 6; 150 calories per serving

nonstick cooking spray
12 egg whites, beaten
1 cup light sour cream
8 ounces shredded low fat cheddar cheese
10 ounce package frozen chopped broccoli, thawed, drained, and pressed dry
1/2 tsp black pepper

Spray a slow cooker with non stick cooking spray. In a large mixing bowl, combine the egg whites, sour crea, cheese, broccoli, and pepper, then add to the slow cooker. Cover and cook on low 4 hours.

Kickin Chicken Tortilla Soup



This was so delicious!!!


3 cups fat free chicken broth

4 ounces cooked lean skinless boneless breasts, shredded (I cooked the day before the chicken in a crock pot on low heat for 5 hours with enough chicken broth to cover and the chicken just fell apart)

1 cup canned diced tomatoes, undrained

1/2 cup canned sweet corn (I used frozen thawed corn)

1/2 cup chopped onions

1TBSP chopped jalapeno peppers ( I did not use but thinks it could use a little to spice it up a bit, if you don't like hot though I would not use it or only do half the amount it calls for)

1 TBSP lime juice

1TBSP fajita seasoning mix

1 tsp minced garlic

1/4 tsp ground cumin

1/4 tsp chili powder

6 baked tortilla chips, crushed

Optional toppings: cilantro, fat-free sour cream, fat free or low fat shredded cheese ( I used fat-free sour cream and fat-free shredded cheddar cheese...recommend using) :)


In a medium pot spray with non stick spray, cook onions, garlic, seasoning, and spices over medium heat until soften, 3-5 minutes.

Add chicken broth and bring to a boil. Then reduce heat to low and simmer for 10 minutes.

Add the corn and diced tomatoes, and contine to cook for 5 minutes.

Add chicken, jalepeno, and lime juice. Stir for 2-3 minutes to thoroughly blend flavors.

Once ready to serve, top each serving with crushed chips and if desored the optional toppings.


Makes 4 servings.

Serving Size: 1 generous cup: 101 calories, 1g fat, 650mg sodium, 13g carbs, 1.5g fiber, 11g protein

Coming down in inches!

Guess the extra work is paying off. About 2 weeks ago bought a 7/8 pant! Last summer I was in 13/14 :( ! I have a ways to go but, I feel great and know all my hard work is paying off! It was no bikini but, I got in my new swimsuit for an aerobic class Saturday! :)

New Compression Socks...

I ran with these new sports compression sleeve socks today and they seemed to really helped my leg. These were recommended to me for my weak muscle in my leg and will help with circulation. I did a long run today after not doing much running since my last race. I've been focusing on alot of spinning and TRX to help with some more weight loss. I have the child abuse prevention 5k saturday so I kicked it up a bit this past week with running.

Finishing up a REALLY great book



Kara Goucher, Olympic Distance Runner, just came out with a book this April. It is an awesome, quick read. She talks about mostly running of course but has a lot of great information on diet and staying healthy. If you do want to start running this will start you from the beginning. She also talks about being a mother and fitting fitness into your schedule!

Pan Seared Salmon with Honey Mustard Glaze

Preheat oven to 400. Heat some olive oil on a cast iron pan on medium heat. Season the top of the salmon fillets you have with sea salt and pepper. Once the pan is heated, place it face down on the hot pan and sear for about 5-7 minutes(it should NOT be cooked through by the end of this time).
In a bowl, melt 1 TBSP of unsalted butter and 1 tsp of brown sugar. Heat in the microwave for 30 seconds until melted. Then mix together and add 2 TBSP dijion mustard, 1TBSP honey, and 1 tsp of soy sauce. This is more than enough for 2 pieces.
After 5-7 minutes, flip the salmon and brush it with some (but not all) of that mixture. IMMEDIATELY place that pan in the oven for 5 minutes. Remove from the oven, brush with more of that glaze and ENJOY!
It is so crunchy on top and so delightfully tasty! I served with with a sweet potato with 1/2 tsp of coconut oil mushed into it and it was like a party on your tastebuds! It recommended serving it with asparagus which would have been delicious but wanted to try out the sweet potato with coconut oil!

Scrumptious Slow Cooker Chicken

2.5 lbs boneless, skinless chicken thighs
3 parsnips
3 carrots
4 celery stalks
1 red onion (I used a white because I forgot to get a red)
10-12 whole garlic cloves
1/4 cup coconut oil
1 cup chicken broth
1 TBSP dried thyme
1 TBSP ground sage
Sea salt and Pepper to taste

Cut the parsnips, carrots, celery, and onion into large chunks making sure the carrots and parsnips are cut roughly the same size for even cooking. Place the chicken in the crockpot and sprinkle with seasalt and black pepper. On top of the chicken layer the onions and whole garlic cloves followed by the parsnips, carrots and celery. In a glass measuring cup mix together the chicken broth, coconut oil, thyme, and sage (it helps to melt the coconut oil first in the microwave.) Pour the mixture evenly over the chicken and veggies and cook on high for 5 hours or low for 7 hours.

This was delicious and so easy! Andrew...being the man he is...need "something" else with it. It was very filled for me to have just a bowl of this. I guess you could serve with biscuits or "something" else. But remember that this adds calories to the meal.

**Before it is cooked and then after** The chicken just falls apart! Yummy!

Mexican Lasagna

This is a recipe from one of Jillian Michaels book I am reading right now!

1 1/2 pounds of ground beef (I used ground turkey)
salt and pepper to taste (I used none of this)
1.25 ounce package taco seasoning mix
15 ounces low fat ricotta cheese
1/4 cup sour cream
27 ounces canned whole green chilies (drain and reserve 2 TBSP of canned juice)
2 TBSP Tabasco sauce
4 six inch, low carb tortillas

Preheat oven to 350 degrees. In a skillet over medium heat, break up the meat with a wooden spoon, and cook until browned. Drain off the grease. Stir in the taco seasoning mix and enough water to make a paste. (I used about 2 TBSP) In a small mixing bowl, whisk ricotta cheese, sour cream, reserved chili juice, tabasco, and 1/2 cup water. Spread a little of the mixture to cover the bottom of a 13 by 9 inch baking pan. Cover the sauce with a layer of tortillas, overlapping slightly. Sprinkle the meat mixture evenly over the entire base. Cover with a single later of whole green chilies and pour over the remaining sauce to top. Bake 45-60 minutes. Remove from the oven and allow to stand 5 minutes before serving.
