I did it...

**Kara and I coming into the finish!**

Well I ran the 5K and made it through without any injury. I actually beat my overall time...31:46. I have a 8K this Saturday which is 5miles and I am just hoping that I can come in under 60 minutes. I am not pushing for speed this time though. I am just hoping to get though it. My knee has been giving me a good amount of pain this week. I am keeping the machine on it two times a day following with ice. It seems to be helping until I can see the doctor on January 6. I want to train for my half marathon. I want to run it in 2012. Before I start training for that I want to get my knee looked at again. I am just keeping the running and exercise up as much as I can. I don't want to injure it and have it set me way back again.
I am still weighing in with Kara. I was pretty much staying the same because I was not able to do any physical activity the past month and a half. I started up running last week and already have lost some. I weigh in tomorrow so I will update you with that when I do. So these are my goals...
Lose another 5 pounds by Christmas
Run two 8K's by January 1, 2012
Keep my knee working
Journal my eating especially on the trip to Erie for the holidays
Weigh in mid January at 145

Here are some pics from the race:

Running a Race FINALLY!

Running a Race tomorrow with my neighbor! I have not been running since my knee injury. I am still having pain and I am having a second opition on it but not till January 6. I can not stop running till then. I had lots of pain last night and I am hoping that I don't hurt it more. So wish me luck that I make it through. I am not running this race for time just to finish. I have only ran two days since I starting physical therapy a month and a half ago. So I am not at my best!

A quick update...my tests for my cortisol levels came back negative after doing the 24 hour test. No more testing needs to be done for that. I am actively seeking a new scleroderma doctor on the new chat site I joined for the Scleroderma Foundation. I have found some support along with new information. I see a new orthopedic doctor for my leg on January 6. After my knee injury I have found out new things about what Scleroderma has down to the growth of my leg. It has stunted it leaving my right leg shorter than my left and probably what has been giving me hip, knee, and ankle troubles. I will fill in more about that later when I see the new doctor. I have been so busy with all of these appointments and visitors ( thank God for them to get me through this rough time). Now I want to get back into my racing and get my brain focused again. I feel like I have been so negative about myself...that feeling of a piece of garbage. Well I am done feeling that way. Heres to a NEW YEAR and a whole new set of races and hopefully more weightloss! :)

Weigh in...

No weight loss this week! :( I am hoping it was because of some muscle gain! I have been so strict with counting what I eat and working out morning and afternoon with Kara! Not giving up not even in Erie. I will still be watching what I eat and exercise everyday! By the way...so excited the dress for the wedding in two weeks zips up so there are inches being lost! :)

Weighing in AGAIN!

My neighbor Kara and I have started a weigh in with each other on Tuesday mornings to keep each other motivated! We are also working out each day together. It has been so much fun and really motivating to have someone to work with. I hate to say it but I slowly gained some weight back when I was not working out through all this "not feeling well". Two weeks ago for our first weigh in I was at 160. Last week we weighed in and I was 155. This week we are weighing in on Wednesday instead of Tuesday. I am feeling wonderful and have been recording what I have been eating and it has really helped. My portions and snacking started to get pretty crazy again. I will keep you updated with my future weigh ins. I will be traveling to Erie from October 7-23 and really need to stay on track. I will be exercising everyday along with recording what I eat. Kara and I will have a phone call weigh in and continue weigh in when I get back!

Recipe for Breakfast Frittata

You can pretty much put whatever veggies you have in your frittata. This is what mine had in it...
4 slices of low fat/low sodium bacon cut into small pieces ( I have used turkey bacon and turkey sausage before too)
5 eggs
Handful of green onion
1/4 cup brocolli
1/2 cup cherry tomatoes cut in half
Handful of Shredded Cheddar (you can use whatever cheese you have on hand)

1. Preheat oven to 350 degrees.
2. Mix all your ingredients together and place into a cast iron pan.
3. Check it after 15 mintues. Mine took about 25 minutes. Just wait till it gets puffy and slightly crisp on top.

I cut mine into 8 servings and it has about 75 calories. Lower if you use turkey bacon or turkey sausage. I served mine with fruit salad. It was great for dinner but of course also for a Sunday brunch!

Yummiest!

I will post the recipe this evening! It is so yummy!

This is the Endocrinologist I will be seeing now on November 9...I'm sorry but he looks very creepy to me! I tried to get a picture of the colored version (much creepier) but it didn't turn out!

Update from Hematologist...

Sorry I took so long to catch you all up from my infustion last Thursday. Lori visited Friday to Friday and we were very busy! I sure do miss the company already!
My infusion I had was for my blood disorders, Von Willebrands and Hemaphilia A, both are classic cases. My Hematologist retested all my levels when I went in after not seeing him for 4 years. I was having more symptoms since I last saw him. He had found that my Von Willebrand leverls were still low along with low levels of Factor VIII which is Hemophilla A. There is no cure for these blood disorders but there are treatments when symptoms like mine occur. The treatments replaces the factors you are missing through this infusion. The factors I am missing he explained act like glue in my blood stream. I have very low levels so my blood has a hard time clotting.
I had my first infusion done last Thursday at the Lewis Cancer Center where my Hematogolist's office is located. It was done through IV and I received the royal treatment throughout the whole process. I sat in a comfortable recliner, pillows behind my back and under my feet, snacks, and drinks. Everyone was in such great spirit from nurses to the patients that were in for their weekly chemo treatments or dialysis. They really were amazing! I got blood take before the treatment to test my levels again. Then the infusion began that was supposed to last 30 minutes than I would have to wait 30 minutes after for them to retest my levels. After 8 minutes of the infusion I felt like my neck and head were on fire and I was beat red. The nurses stopped the IV and started water to flush it out. The doctor came in and said to do a steriod shot into the IV and begin treatment over again. After it started the second time I was fine. They retested my levels after treatment and I was released to go. They told me I would hear back in a week to see if it worked on me. It was to rebuild both factors to help my blood clot.
I received a call back on Tuesday saying the treatment worked and my levels were normal after having treatment. This means that I will have this available in case I were to have any future surgeries, accidents or give birth again. I can receive it 30 minutes prior to any procedure. I also will be receieve this drug called DDAVP. It's a synthetic hormone, similar to the natural hormone vasopressin, that controls bleeding by stimulating your body to release more von Willebrand factor already stored in the lining of your blood vessels — thereby enhancing factor VIII levels. This will be the same as the infusion but in a smaller nose that I can give myself through a nose spray that will help incase I get a bad cut or during my menstral cycle to help with heavy bleeding. I am waiting for that to come into my pharmacy. I will follow up with my Hematologist once a year unless I have other complications.
I have my appointment scheduled with the Endocrinologist scheduled for October 20th. I am on the cancelation list but when I called last week I was number 26. We only have 2 Endocrinologists in Savannah so I was told a million times it is very hard to get in and that I have a very good appointment since I am a new patient. So I am still waiting to find out why my cortisol levels are so high. Say some prayers that I can get in earlier...it is driving me nuts along with all these crazy symptoms...I hope it is something I can get treatment for and can explain all this weirdness!
I have started back with some exercises. The mornings are cooler so it is nice to get out for some walking with Lucas. I have been doing some running and I am going to try and do the YMCA 5K that is coming up soon. I have to check the date out. If I can get some more running in these next two weeks I will be ready! Wish me luck...I miss the running and all the races are starting back up with the cooler weather approaching.

Back to the drawing board...

Doctors and more tests! This is a never ending circle. I am waiting to hear back from my Hematologist. He did find that my levels for Factor VIII are low which means I would have Hemaphilla A, another blood disorder. I had another test done on Thursday to see how much lower it dropped to determine my treatment. He said it would probably be an IV therapy treatment...I do not know details yet. I decided I will ask my 100 questions when I find out if I need to have it.
While I was waiting on that I found out that my cortisol levels on my blood test from my Primary Care Physician came back high at a 31.9 when the normal range is 2.3-19.4. I am currently in the process of getting referred to an Endocrinologist that will decide what needs to be done for this. Again, I have not a clue what all this means except that I need to be seen to see what is causing such high levels. I will hopefully hear back by the end of the week to when my appointment is with that doctor.
This whole process has not been fun and I have been not feeling that well still. My energy level has dropped and I have been very tired and need all the sleep I can get. I have not made it to my morning workouts even though I really need them. I have not lost anymore weight but, right now sleep is more important with being a stay at home mom. I will keep everyone posted on my next steps for everything but for right now my weigh ins are coming to a stop! I am still not sure about the race on September 3. I have not signed up yet because right now I am not sure my body can take the stress right now.
It has been so rough having all these tests and appointments. Especially having Lucas with me and Andrew not being able to take off work all the time. He has been so accomidating and it has helped out tremendously...I don't know what I would do without him!
Keep me in your prayers...I am having a tough time! Looking forward to our October trip...I need my family and friends time! Miss you all!

Struggling...

I have been struggling the past couple weeks with eating the right foods. I have started back to exercising classes. This week I am adding weights on Tuesday and Thursday with one of my friends that is a personal trainer at the YMCA. She already works out with weights on those mornings so she said she would train me for no fee!!! :) I have a hard time increasing my running because it is so hot outside and have been having a hard time on the treadmill. I am hoping that adding the weights and starting a strict eating schedule this will help me get back on target!
I have my doctors appointment with my Hematologist on Thursday at 3:00. I will get my results from the bloodwork and go from there.
My injection shots I give myself on Mondays have been going well. I have been getting relief from my joint pain and the sick feeling has been fading away. Last Tuesday morning was the first time after my injection I was not sick. I still was very tired that day after but that is normal and will most likely not go away as long as I am taking this.

SMITH Hot Dog Party!

We are throwing our annual smith hot dog party this Saturday! I am stressing because I just got back into my exercise routine and have really been trying to watch what I eat. Everyone, including myself, make and bring such yummy food you can't resist! So the plan is to have a veggie tray and I am making my healthy corn tomato salsa and I am going to do wonderful! My plan is to get an hour at the gym either Friday night or Saturday. Andrew has to work Saturday but not sure how long so I might have to do powerhour Friday morning and Friday evening weights and running. The past two weeks have been tough! This is the first day in a long time I have felt good and energetic again! Running 4 miles tonight when Andrew gets home. ( on treadmill...106 outside!) I have a race on September 3rd for Leukemia! Hopefully we will get some cool air for that day!

Back Post...

This was a race I did in Harborcreek, PA on July 4, 2011 with my sister in law Erica.

So serious...haha!

Always have to get a picture with my good luck charm!

2nd place in my age group!

Monday Check In

Today was weigh in day.(Numbers are posted to the right and will be each Monday) I did not lose much or inches but I am just getting back into working out this week. Last week I watched what I ate but no working out. I just got the okay from the doctor to start exercise back up while we are waiting for test results to still come back.

Since starting the methotrexate injection, today was the first day I was not ill from it. My doctor did lower the dose and it seemed to really help. I was very tired today and did have to nap when Lucas did. This is normal to feel like this the day after the injection and this will not go away. I am thinking of taking it on a night that Andrew will be home the next day.

I did have a great workout on Monday and it felt great to be back with the morning group! They were so happy to see me back too! I am hoping to see a bigger weight loss this week.
My workout week consists of this:
Monday- Spinning 5-6am
Tuesday- Walk or Rest
Wednesday-Spinning 5-6am
Thursday- Running (3 miles-fartleks)
Friday- Power Hour 5-6am (some fridays in the afternoon, eliptical and weights)
Saturday- Running (3 miles...hills)
Sunday- Running (Long Run...adding miles each week)

I made a new receipe from fitness magazine that was great! It was a greek pasta salad. I will post picture and receipe this week. We grilled some chicken with it and it was a great healthy summer dinner!

Set Back...

I have been set back with all this stuff going on so, I am going to post my weigh in and measurements every Monday for all to see. I hope this will get me going and keep me going. Its been a tough rollercoaster ride and it is still not over! I have gained some of the weight I had lost back with traveling and not working out and watching what I was eating as much. I will have my weigh in tomorrow and I will post all my new numbers. Glad to be back!!!

New Goals!

I have been very busy with Erie trips and medical appointments. I still do not have any answers to what has been going on but, will update and fill everyone in as soon as I know a little more. I am taking a break with my very early morning classes for a bit until I have my Hematologist appointment on August 2. I also have been struggling with tiredness from my new injection shot I have been taking. I hope to get back to those classes soon but right now I have to get as much sleep as I can.
My plan for the next two months...

  • Run/Walk at least 3 miles /6 days a week (run what I can depending on how I feel)

  • 11 minute ab video everyday

  • Cook atleast one healthy new receipe a week

  • Stick to 1200 calories a day and burn atleast 400 calories a day

  • Lose 15-20 pounds by October 10, 2011...weigh in each Monday

  • Run a 5K in 29 minutes or under

  • Work up to running 6 miles in my race pace

Child Abuse Prevention 5K Race

The race started a half hour late. Everyone was ready to go at 8:00 and they made a mistake and it started at 8:30...not a great starte for everyone who was all warmed up ready to go! The temperature that day was 92 and the humidity was ridiculous! The sargent of the military base mad the course and it was through the woods on a (what they called ) trail. There were tree branches sand, small holes/ditches to jump, and just craziness! Some was on a path but not much! I joints and muscles were a little ssore when I woke up but, it was not too bad until I started running in the heat! I did not beat my last race time but I was glad to finish and a pretty good time for what I had to tackle! :) So here is a little of the race day to share... Of Course I had to get a picture with my Lucky Charm!

Here I am warming up before the race!Since we received hats instead of tee shirts I had to make a sign to pin to my tank top!

Cheryl "Granny Grayson" came out to support me in the race. She was my paraprofessional while I worked with Elijah!

Here we go all lined up!
Star Spangled Banner before the Start!

Off we go into the woods... Never thought I would make it out but, here I come!

Through the finish line at 35:09!So glad to be done...look at that sweat! Group picture at the end of all the runners!

Tomorrow is the Race!

I did not have too many pictures on my teaching disc. I have all my other pictures of him, some really sweet ones, on my old computer that we still need to retrieve data from when it crashed!

This was him on field day with another classmate! Here we are on field day with our matching shorts. He thought we were so cool and everytime someone came over with a camera he would say,
"Take a picture of us. We are twins!"
Far from it but it was too cute!

I am going to try to run this one hard and strong for him! I am very sore when I woke up this morning and my joints and muscles are achy because of the high humidity we are having. I am going to hold my head high and strong just like he did each day he walked into my classroom, hiding that pain! Results and pictures to come soon!

New Watch Coming Tomorrow!!!!!

I ordered this new watch, Garmin Forerunner 450, I have been wanting for running and cycling. It has a GPS on it so you know how far you ran or rode and what pace you are going at. One of the fitness instructors and my friends husband has one and they work really well. Another thing it does is tells you how many calories you burned after any workout! Then I can upload any workout onto the computer to analyze and make goals for yourself. I am super excited and it is supposed to arrive tomorrow...I have been tracking it like a crazy person!

Can't believe I forgot to post this...

I hit 35 pound weight loss on Monday!!!!!!!!! :)

Doctor Visit Soon

I have a doctor appointment coming up on May 31 to see a new doctor to treat me for my Scleroderma. I have not seen a doctor for almost 4 years now. I have been doing pretty well and had a great pregnancy not being on any medications. I have been concerned with a couple minor problems and have been told by my family physician that I might feel good on the outside but, this disease needs to constantly be treated on the inside. I am really looking forward to seeing this doctor to start on some medication and physical therapy. Please say an extra prayer that this doctor is educated enough with Scleroderma to treat me properly. I have seen too many doctors in the past that "think" they treat Scleroderma and it has been a nightmare. I will keep everyone posted and thank you for your extra prayers!

Quick Lunch Idea

I forgot to take a picture of this but, it was so easy and very yummy. It is also good reheated.

Broccoli and Cheese Crustless Quiche
Serves 6; 150 calories per serving

nonstick cooking spray
12 egg whites, beaten
1 cup light sour cream
8 ounces shredded low fat cheddar cheese
10 ounce package frozen chopped broccoli, thawed, drained, and pressed dry
1/2 tsp black pepper

Spray a slow cooker with non stick cooking spray. In a large mixing bowl, combine the egg whites, sour crea, cheese, broccoli, and pepper, then add to the slow cooker. Cover and cook on low 4 hours.

Kickin Chicken Tortilla Soup

This was so delicious!!!

3 cups fat free chicken broth

4 ounces cooked lean skinless boneless breasts, shredded (I cooked the day before the chicken in a crock pot on low heat for 5 hours with enough chicken broth to cover and the chicken just fell apart)

1 cup canned diced tomatoes, undrained

1/2 cup canned sweet corn (I used frozen thawed corn)

1/2 cup chopped onions

1TBSP chopped jalapeno peppers ( I did not use but thinks it could use a little to spice it up a bit, if you don't like hot though I would not use it or only do half the amount it calls for)

1 TBSP lime juice

1TBSP fajita seasoning mix

1 tsp minced garlic

1/4 tsp ground cumin

1/4 tsp chili powder

6 baked tortilla chips, crushed

Optional toppings: cilantro, fat-free sour cream, fat free or low fat shredded cheese ( I used fat-free sour cream and fat-free shredded cheddar cheese...recommend using) :)

In a medium pot spray with non stick spray, cook onions, garlic, seasoning, and spices over medium heat until soften, 3-5 minutes.

Add chicken broth and bring to a boil. Then reduce heat to low and simmer for 10 minutes.

Add the corn and diced tomatoes, and contine to cook for 5 minutes.

Add chicken, jalepeno, and lime juice. Stir for 2-3 minutes to thoroughly blend flavors.

Once ready to serve, top each serving with crushed chips and if desored the optional toppings.

Makes 4 servings.

New Compression Socks...

I ran with these new sports compression sleeve socks today and they seemed to really helped my leg. These were recommended to me for my weak muscle in my leg and will help with circulation. I did a long run today after not doing much running since my last race. I've been focusing on alot of spinning and TRX to help with some more weight loss. I have the child abuse prevention 5k saturday so I kicked it up a bit this past week with running.

Finishing up a REALLY great book

Kara Goucher, Olympic Distance Runner, just came out with a book this April. It is an awesome, quick read. She talks about mostly running of course but has a lot of great information on diet and staying healthy. If you do want to start running this will start you from the beginning. She also talks about being a mother and fitting fitness into your schedule!

Pan Seared Salmon with Honey Mustard Glaze

Preheat oven to 400. Heat some olive oil on a cast iron pan on medium heat. Season the top of the salmon fillets you have with sea salt and pepper. Once the pan is heated, place it face down on the hot pan and sear for about 5-7 minutes(it should NOT be cooked through by the end of this time).
In a bowl, melt 1 TBSP of unsalted butter and 1 tsp of brown sugar. Heat in the microwave for 30 seconds until melted. Then mix together and add 2 TBSP dijion mustard, 1TBSP honey, and 1 tsp of soy sauce. This is more than enough for 2 pieces.
After 5-7 minutes, flip the salmon and brush it with some (but not all) of that mixture. IMMEDIATELY place that pan in the oven for 5 minutes. Remove from the oven, brush with more of that glaze and ENJOY!
It is so crunchy on top and so delightfully tasty! I served with with a sweet potato with 1/2 tsp of coconut oil mushed into it and it was like a party on your tastebuds! It recommended serving it with asparagus which would have been delicious but wanted to try out the sweet potato with coconut oil!

Scrumptious Slow Cooker Chicken

2.5 lbs boneless, skinless chicken thighs
3 parsnips
3 carrots
4 celery stalks
1 red onion (I used a white because I forgot to get a red)
10-12 whole garlic cloves
1/4 cup coconut oil
1 cup chicken broth
1 TBSP dried thyme
1 TBSP ground sage
Sea salt and Pepper to taste

Cut the parsnips, carrots, celery, and onion into large chunks making sure the carrots and parsnips are cut roughly the same size for even cooking. Place the chicken in the crockpot and sprinkle with seasalt and black pepper. On top of the chicken layer the onions and whole garlic cloves followed by the parsnips, carrots and celery. In a glass measuring cup mix together the chicken broth, coconut oil, thyme, and sage (it helps to melt the coconut oil first in the microwave.) Pour the mixture evenly over the chicken and veggies and cook on high for 5 hours or low for 7 hours.

This was delicious and so easy! Andrew...being the man he is...need "something" else with it. It was very filled for me to have just a bowl of this. I guess you could serve with biscuits or "something" else. But remember that this adds calories to the meal.

**Before it is cooked and then after** The chicken just falls apart! Yummy!

Mexican Lasagna

This is a recipe from one of Jillian Michaels book I am reading right now!

1 1/2 pounds of ground beef (I used ground turkey)
salt and pepper to taste (I used none of this)
1.25 ounce package taco seasoning mix
15 ounces low fat ricotta cheese
1/4 cup sour cream
27 ounces canned whole green chilies (drain and reserve 2 TBSP of canned juice)
2 TBSP Tabasco sauce
4 six inch, low carb tortillas

Preheat oven to 350 degrees. In a skillet over medium heat, break up the meat with a wooden spoon, and cook until browned. Drain off the grease. Stir in the taco seasoning mix and enough water to make a paste. (I used about 2 TBSP) In a small mixing bowl, whisk ricotta cheese, sour cream, reserved chili juice, tabasco, and 1/2 cup water. Spread a little of the mixture to cover the bottom of a 13 by 9 inch baking pan. Cover the sauce with a layer of tortillas, overlapping slightly. Sprinkle the meat mixture evenly over the entire base. Cover with a single later of whole green chilies and pour over the remaining sauce to top. Bake 45-60 minutes. Remove from the oven and allow to stand 5 minutes before serving.

Saturday Night...

Well, I finally have some time to sit down and blog a bit! So here we go...

I have been exhausted this week! Trying to adjust to my new schedule. I started Monday with waking up at 4:20 Monday-Friday to go to the YMCA. Mondays and Wednesdays still Spin classes and Fridays Power Hour. Tuesdays and Thursdays are strength training and 20 minutes of cardio that follows. I finally decided that my body is ready and NEEDS strength training to help me lose the rest of my weight and inches. I was training so much for my races but, now racing season is slowing down a bit and will continue to throughout the summer. I decided that this is the time to add this into my schedule before races pick back up gain in September. I still have a couple more races before the summer though. It is hard getting up each morning expecially now that I do not even have one day to sleep in. Even the weekends are busy with Saturday 2 hour bootcamp at the YMCA and Sunday church.I am really looking forward to Mothers Day...that is all I want is a day to sleep in and wake up on my own and to have a nice long shower or just a shower is fine! The little things that make you happy after becoming a FULL TIME mother! :)

I have been doing some new reading...Kara Goucher's new book (Olympic Distance Runner) Running For Women...From First Steps to Marathons and also Jillian Michael's UNLIMITED! Both are great reads and very motivating!

Bathing suit season is fastly approaching! Yuck the worst season of all and I hate putting on swimsuits, although I LOVE swimming! I will be out searching at the end of May for a new swimsuit so WATCH OUT...not my favorite time and sometimes (ok most of the time) it puts me in a bad mood! So if you are in a dressing room in Savannah and hear huffing, puffing and some not so nice words...look out!

So speaking of swim suits...today I start my No Fast Food Pledge! I have pledged to not eat fast food and I am going to start a count. Cheer me on and join me to take another step to being healthier and living longer!

I will be cooking many new recipes this week including:
Mexican Lasagna
SlowCooker Chicken
Breakfast Fritta
Scallops and Cauliflower Mash
Salmon with Honey Mustard and Sweet Potato with Coconut Oil
Paleo Pizza
Baked Chicken Parmesan
Kicken Chicken Tortilla Soup

I am going to give them all a try and when I get a good dish I will post it for all to try!
Talk to you all later in the week!
